It’s called our “house” kimchi because the mix of cabbage & daikon is what I grew up eating most, and it’s based on my favourite recipe I learned from my mom! The spicy mix of cabbage & radish give a little bit of tangy, traditional flavour, along with some crunch. In our Vegan recipe, a house-made dashi full of mushrooms, kombu & aromatics is added to give great depth and umami. The spice level is higher - not super intense, but it’ll bring some heat to your meals!
