Normally the house kimchi is our spiciest, but sometimes we also make it mild! And in this case, we've also made it Vegan using a house-made dashi full of mushrooms, kombu & aromatics to give great depth and umami.
This is our “house” kimchi because the mix of cabbage & daikon is what I grew up eating most, and it’s based on my favourite recipe I learned from my mom! The mix of cabbage & radish give a little bit of traditional flavour, along with some crunch, and with a very mild heat.
